New Potatoes with Dill Butter
I slow roasted a couple of salmon filets for dinner, oven 275° for 10-15 minutes, I serve them with steamed asparagus and these New Potatoes with Dill Butter from Bon Appétit as a side.
½ stick unsalted butter, room temperature
2 tbs coarsely chopped fresh dill plus more for garnish
Salt and freshly ground pepper
1 lb new potatoes
1 tsp crushed toasted caraway seeds
Mash butter and 2 Tbsp. dill in a small bowl. Season dill butter with salt and pepper. Place in fridge to firm up.
Place potatoes in a large pot. Cover with cold water by 1 inch; season with salt. Bring to a boil; reduce heat to medium and simmer gently until tender, 10–12 minutes. Drain.
Place drained potatoes to back into pot; add ½ the dill butter and 1 Tbs water. Toss gently until butter lightly coats potatoes with a glossy sauce. Season with salt and pepper.
Serve and garnish with more caraway seeds and dill.
Keep remaining dill butter in fridge and use later.
These were very good, the dill smells fabulous, this was simple to make and the caraway seeds addition was great.
